If I only had one knife it would be a Santoku. I first used one in a professional kitchen and now use it for everything at home. I haven't touched the traditional western style chef's knife in a very long time. I love the way it handles onions and carrots as well as meat and fish. It is particularly well suited for precise cuts with meat and fish to trim fat or just to shape. My secret? I love Henckels higher end knives but their entry level ones are fantastic as well. My Santoku is a simple plastic handled Henckel that takes just a few pulls against a steel to keep it honed.

From my experience, you get what you pay for with knives. We have a great set of Henckels and could not be happier. When you think about the knives lasting 20 years, spending the extra couple hundred to get a premium set of knives is absolutely worth it if you spend any time in the kitchen.
