I absolutely love my lodge cast iron skillet. It came pre-seasoned, and I use it to broil meats, cook bacon and bake my tarte tatin. This is a must own item in any kitchen. It goes from stove to oven and is much cheaper and works better than other, fancy non-stick pans. Not so good for eggs, though, and don't put it in the dishwasher (some even say you're not supposed to wash it at all--just put some water in it and put it over a flame. I wash mine.).
Pierre Franey came to America with three items from France: A 10" chef's knife, a vegetable peeler, and a cast iron skillet. You can do almost anything in a cast iron skillet if you treat it right. Over time, it actually will become more non-stick if you avoid washing it too much. The key is to scrub with a steel wool, oil it, and wipe it dry. No soap needed. I love this skillet! Food tastes so great and cooks very evenly in seasoned cast iron skillets.
